Finding Inspiration in Every Turn

Our Story

​We are an experienced business couple from Kharkiv, Ukraine, where we jointly run (now remotely) a successful cheese-making business and Thatchers, a well-established large restaurant.

Currently, we sell to more than 40 restaurants throughout Ukraine, and I believe we are one of the best artisan cheesemakers in Ukraine. We produce Stracciatella, Halloumi, Feta (from cow’s milk), Camembert, Caciotta, Cheddar, Gouda, Colby, processed burger cheese, yogurt, cottage cheese, cream cheese (Philadelphia). We can make Raclette, Taleggio and blue cheeses.

Now in Cornwall, we have come to appreciate the strength of the Cornish food brand, including its cheeses, and seek to build on this by introducing new, good-quality cheeses to the menu as a fusion of Ukrainian cuisine and Cornish food culture. In particular, we have identified a gap in the market for those cheeses we are proficient in making, especially Feta, Halloumi, Stracciatella and Caciotta.

Who We Are

Dmytro and Elena Rozhkov moved to the UK in 2023, displaced by the war in Ukraine. Dmytro is a chef and restaurateur who found a love of making cheese when he needed a unique, high quality product for his cuisine. With his partner Elena, they are translating their tremendous success in Ukriane by using local Cornish dairy to introduce the UK to a whole new world of cheeses.
